Sumac chicken skewers
Sumac's beautiful deep red flecks and tangy, astringent, slightly bitter taste works brilliantly with chicken. Perfect for the barbecue.
- Chicken breast
- Olive oil
- Salt and pepper
Cut the chicken into large chunks, place in a bowl and squeeze in some lemon juice. Grate the zest of the squeezed lemons and thow it into the chicken.
Add olive oil, large pinches of sumac, and a few twists of salt and pepper. Leave to marinade for as long as you can afford.
Thread the chicken onto skewers and grill or barbecue until juicy and charred.
