Basic crêpes

  • 2 large eggs
  • Plain flour
  • 50 - 50 milk water mix
  • Salt
  • Butter

Beat the eggs and enough flour together to make a smooth paste. Slowly add milk and water mix while whisking until you have a thinish batter. It should coat the back of a wooden spoon, but not be too thick.

Add a pinch of salt.

Heat a knob of butter in a hot frying pan and pour some batter in. Cook on both sides until bubbled and golden brown. The first crêpe is always the ugly child, so eat that while you use up the rest of the batter making the others.
